Few of us now know the ancient origins of wassail. It's not just a delicious, frothy hot mulled beverage but the term is a wish for good health and a plentiful fruit harvest, especially apples. Folks wen wassailing on Twelfth Night which is 6 January if you observe by the current Gregorian calendar or 17 January if observing by the ancient Julian calendar.
